Last night Kara and her parents came over for dinner! It is amazing that Kara (my childhood BFF) and her husband are moving back to Cleveland this month too. I think we may have planned this when we were 1o and building forts in the backyard. 🙂
We had a really fresh dinner of grilled veggies, chicken, Greek quinoa and salad. The salad was so good! I love that you can eat salads for every meal in the summer. The possibilities are endless- from adding chicken or steak, to lentils and pineapple!
- Romaine
- Red cabbage
- Cherry tomatoes
- Red onion, sliced thin
- Artichoke hearts
- Kalamata olives
- Feta
- 3/4 c. EVOO
- 2 Tbsp. Italian seasonings
- 1/3 c. lemon juice
- 2 garlic cloves, pressed
- lots of fresh pepper + salt
1. Make salad with lots of ingredients.
2. Toss with dressing and serve!
