This morning felt like a week ago. Since waking up at 6:30, we got a ton done. I made the usual weekend “list'” and we had it all done before noon. From garbage and dusting to taking baby things to the attic and rearranging my closet. Hello Spring, where are you? Anna played and rode in the backpack while we worked. I also squeezed in a workout – 45 minutes on the elliptical with an Oxygen mag and a few weights.
For the OSU game (we won!!) we went to Brady’s parents for dinner.
We had a delicious dinner of tuna steaks, salad, asparagus and grilled potatoes. Dessert was definitely worth sharing though. It was amazing! Fresh, fruity, creamy and lemony!
Meyer Lemon Berry Parfaits
- 1 block cream cheese
- 1 cup powdered sugar
- 1 1/3 cup cream
- 6 tsp. Meyer lemon juice
- zest from lemons
- Beat cream cheese and sugar.
- Add cream and mix
- Fold in lemon juice and zest.
- Chill
- Layer with berries to serve.
- Enjoy!
