Today feels like Monday, but it’s not! Love the three day weekend! This morning Anna and I worked on stuff around the house. We did laundry and played with toys. Then we got to work on making dinner for our friends down the street. The plan for tonight was to make fritatta, but I thought mini muffin quiches might be more fun!
They were simple to make but have a lot of good nutrition! Protein from the eggs, calcium from the cheese and milk and nutrients from the broccoli. I made some hashbrown potatoes to go with them!
Don’t forget to look for online grocery coupons for many of the ingredients for mini-quiches.
Individual Quiches
To serve 5
- 8 eggs
- 4 egg whites
- 2/3 c. skim milk
- 1 tsp. fresh parsley, chopped
- 1/2 c. low fat cottage cheese
- pepper to taste
- 1/4 lb. deli honey ham, chopped
- 1 1/2 c. 2% sharp cheddar cheese
- 1 c. chopped broccoli
- Mix eggs, milk, cottage cheese, parsley, ham, cheese and broccoli together.
- Pour into greased muffin tins.
- Bake for about 30 min. at 375.
- Touch the center to make sure they are firm.
Tonight we are going to Brady’s parents’ house for a fun family dinner! His sister Janelle is leaving this weekend to study abroad in Scotland until JUNE! We are going to miss her so much!

Yum! I am a huge fan of eggs any way, but quiche has to be in the top 3. I love how you did these in a mini style too, so cute–bet your friends loved em!
