This simple side can go with anything from Greek or Asian. It’s fresh and full of fiber.
Tahini Broccoli Slaw
- 2 bags of broccoli slaw
- cooking spray
- 2 tbsp. plain, nonfat yogurt
- 1 tbsp. tahini (sesame seed paste)
- 1 tbsp. seasoned rice vinegar
- salt and pepper to taste
- 1 tbsp. soy sauce if you are making an Asian meal
- Cook broccoli slaw with cooking spray until it’s cooked but still crunchy.
- While that cooks, mix sauce together: mix yogurt, tahini, vinegar and salt and pepper.
- Stir sauce into slaw just before serving.
- Enjoy!!
What brand of tahini do you buy? I normally buy hummus without tahini, but this weekend I tried making my own and purchased the Joyva brand of tahini. Either I’m just not used to tahini, or this brand is not to my liking.
And who doesn’t love broccoli slaw? Mmm…
