We got to Cleveland last night and had a fun dinner with Cindy, Tom, Addie and my parents! Today, my mom and I are going to the gym. Then we are playing, shopping, hanging out and visiting Brady’s grandparents for lunch.
For a fun, simple meal try Swiss chicken.
Swiss Chicken
- boneless, skinless chicken breast – trimmed
- swiss cheese slices (I used 2 %) – 1 per chicken breast
- ham slices – 1 per chicken breast
- Italian dressing
- bread crumbs (whole wheat or panko are both great)
- salt and pepper
Ingredients:
1. Clean, wash, dry chicken breast.2. Make the Good Seasons Italian salad dressing and pour into a bowl.3. Pour bread crumbs in a separate bowl.4. Cover the chicken breast in the salad dressing, and then through the bread crumbs.5. Place on a plate and put one slice of Swiss cheese and one slice honey ham on top of chicken breast.6. Roll up breast and place in desired sprayed baking pan.7. Bake at 400 for 25 minutes.

i used to make something similar to this except i cut a little slit in the chicken and stuffed the ham and cheese inside! so good 🙂
For whatever reason I’m just scared to death of doing a “meat roll.” They look so easy and the presentation is gorgeous. But then I get worried that for some reason I won’t cook it through. Like, what is that all about, right?
