After our busy weekend, it was nice to be home today. I didn’t get much done, but I did do laundry and some unpacking. Anna and I also had a good run this morning in the fall weather.
For lunch, Hadley and Jen came over and we walked to Panera. It was such a great fall day – perfect for a birthday lunch and walk! Before we went we let the girls play together.
Anna was soo excited to see Hadley!
Hadley was petting her like a puppy! π
Lunch was great! I forgot how much I love Panera – you pick two! They have a great veggie soup!
Later this afternoon my b-day celebration continued when Katie stopped over! We couldn’t walk because it was pouring but we had fun catching up! And she brought me a great gift..more on that later! π
For dinner, I made pizza for our neighbors but we had something different. I was not in the mood for pizza because I was craving squash and I decided to make Brady crab cakes since that was what he wanted.
So our dinner looked like this…
Modified Crab Cakes from Cooking Light
- 2 cans of fancy crab meat
- 3 tbs. light miracle whip
- 2 tbs. dijon mustard
- 1 tbs. worchester
- 1 tbs. lemon juice
- 1 c. bread crumbs
- 1/3 c. diced roasted red pepper
- 1/3 c. diced green pepper
- 1 tsp. old bay seasoning
- salt and pepper
- black olives because Brady loves them!
Mix all ingredients together. Shape into portion sized cakes. Spray a frying pan with Pam and pan fry the cake until golden brown on each side. Bake at 350 for 10 min until warm and crispy(ish) It wonβt be too crispy unless you fry them in oil. To make them a little more βrealβ, fry in a few tablespoons EVOO.
My salad with butternut squash, wheat pilaf and tofu!
Since I got my spinning certification a few weeks ago I have yet to practice! I need to get there – maybe tomorrow!
Do you like to spin?
I love it! I was never really into it until this past year but then I got addicted. I spun all through my pregnancy, including the week after my due date! It is a great workout for people of all fitness levels!
I am SO addicted. I was alwys afraid to try it bc I thought I couldn’t keep up, but a gf got me to try it about a month ago and i have been going every week since… and these last few weeks she took me to a new class/ instructor at another near by gym and now like going twice a week. The time really flies and I LOVE the music they play. Such a great work out, esp for a rainy day like today.
I want to spin with you – I am too afraid to go to a class by myself, but I would like to think I could do it.
Your dinner salad looks like dinner perfection to me π I’ve ALWAYS wanted to try spinning–looks like so much fun! I don’t belong to a gym though, so the option isn’t really there. Maybe one day!
your salad looks so good! And Anna is getting SO BIG!
I haven’t been to Panera in far too long..the
closest one is like 3 hours away..I know, pathetic!
