This week has flown by! All of a sudden, it is Friday! We have a fun weekend planned. Tonight – a concert with Brady’s family that his mom is in, tomorrow – Wittenberg Homecoming, Sunday – a trip to get more apples and pumpkins! I feel like we have quite the to do list too because we have been gone so much lately. We will have to squeeze some work into all of our play!
Here is a recipe that I made a few weeks ago and plan on making again. I found inspiration from a number of places: Fannetastic Food and Eating Well.
I also used a Uncle Sam cereal that I was sent to try a while ago. It worked great!
Trail Mix Granola Bars
- 2 C rolled oats
- 1 C Uncle Sam cereal/bran flakes or rice krispies
- 2 C trail mix (I used mountain mix)
- 1/4 C chia seeds
- 1/8 C finely ground flaxseed

Wet
- 1/2 C brown rice syrup
- 1/2 C creamy peanut butter
- 1 tsp. vanilla extract
- 2 T maple syrup
Mix all dry ingredients together.
In a different (microwave safe) bowl, mix together the wet ingredients, then microwave them for about 20 to 30 seconds.
Stir together until combined.
Pour wet mixture over dry ingredients and mix together.
Then, put the mixture into a pan and flatten it down.
I kept mine in the fridge, in a zip-loc bag, but I am sure the freezer would work well too!
LOVE this! I’m crazy about trail mix bars, and I swear it seems like I never make the same recipe twice–I always want to try new ones. My most recent find is in the cookbook I’ve become obsessed with: “Vegan Cookies Invade Your Cookie Jar.” They’ve got walnuts, sesame seeds, pumpkin seeds, and dried cranberries.
