Here is a delicious dinner recipe! It’s so light and fresh and summery! I think I could eat it every night! It was inspired from a recipe I saw in EatingWell.
Quinoa Tabouli
- 1/2 c. dry quinoa (cooked as directed in 1 c. water or broth)
- 1 big cucumber – cut into small pieces
- 3 roma or firm tomatoes cut into small pieces
- 1/2 bunch (1/2 cup?) of (small plastic container) flat leaf parsley
- 1/2 bunch (1/2 cup?) of (small plastic container) mint
- juice 1/2 lemon
- 1 tbsp. olive oil
- salt and pepper
- Cook quinoa as directed.
- Cut tomatoes and cucumbers into small pieces
- Ground parsley and mint together in the mini food processor
- Mix olive oil, lemon and salt and pepper together
- Mix everything together – quinoa, dressing and veggies.
Then add some Aladdin’s hot sauce and tahini yogurt sauce and dig in!

oh yum, I’m a huge fan of tabbouleh, and have never tried it with quinoa in there!
