So tonight, after our relaxing afternoon and walk around the neighborhood (walk total today was about 7 miles – 5 with a neighbor/friend this morning and about 2 with Brady tonight) we came home to eat dinner. I had marinated some thin pork chops for Brady and some tofu cubes for me.
Our spicy/sweet marinade was a mixture of a few ideas. One of them was from an old Cooking Light recipe I ripped out and saved. It involved soy sauce and maple syrup. The rest I just came up with.
Sweet and Spicy Marinade – aka Bring on the Baby Sauce
*I didn’t really measure I just threw things together, but I am going to estimate. Feel free to change the measurements as you’d like!
- 1/3 c. soy sauce (I used lite sodium)
- 1/3 c. maple syrup
- BIG sprinkle of crushed red pepper
- medium sprinkle of red pepper flakes
- 1 T. sesame oil
- 1 T. rice vinegar
Mix together and use to marinate any meat or tofu you would like. I also added sesame seeds!
We had our main dishes on top of large salads that Brady made. The salads included:
- romaine
- spinach
- sweet peppers
- avocado
- tomato
- bacon for Brady
- cheese for Brady
- sugar snap peas
- hard boiled egg for Brady
They were light, spicy and summery!

I cooked his pork chops on the stove in a pan because I thought they might burn on the grill.
Hers:
I baked my tofu at 500 for about 20 minutes. I like it better cooked for 40 min on 450, but I was hungry and impatient!
