What another gorgeous day out today! It was in the 80s and sunny! It was the perfect day to be on recess duty! 🙂
After school and a meeting I came home to get started on our simple dinner. We were making the most of our empty fridge. It was brought to my attention (thanks Katie 🙂 ) that our “empty” fridge and cupboards may not be as empty as other peoples. When I say “empty” I really mean lacking an ridiculous abundant amount of fresh produce. So last night’s meal included some creativity and some pantry staples in our house like bamboo shoots, water chestnuts, sesame oil and a small head of cabbage (which lasts for a long long time, by the way).
Tonight we were “roughing it” a little more. We did have one last bit of fresh asparagus (because I bought 3 lbs. last time), the end of a bag of spinach, some ravioli in the freezer and grilled chicken that Brady cooked on Sunday. So our meals were more He/She.
He had an aspargus, cheese ravioli, black olive, grilled chicken and tomato sauce mess…
Which he promptly turned into this…
This was a super simple “empty cupboard” meal that can be made in no time! Perfect for a busy night and perfect for making leftovers.
- frozen ravioli (I used cheese and made a few servings so Brady could have leftovers for lunches)
- tomato sauce (I used tomato basil from a jar)
- 1/2 can of black olives (sliced – these are Brady’s fave)
- 1 or 2 pieces of already cooked grilled chicken (chopped into small pieces)
- 1/2 lb. roasted asparagus cut into pieces
- Cook ravioli in boiling water.
- While ravioli is cooking, mix olives, chicken and sauce together in a saucepan and heat
- When ravioli is cooked and drained, mix with sauce mixture and stir in asparagus.
For my dinner, I made a Flat-Out wrap. My wrap included (I am not going to lie, I had two – one for me, one for baby)
- 1 Flat Out wrap
- 1 tbsp. Sabra hummus
- 1/2 laughing cow wedge
- smashed avocado
- sliced tomato
- spinach
- hot pepper relish
- salt and pepper
Heat the Flat Out with hummus in a pan until edges are browning. Plate and fill with toppings!
Plus a few ravioli and some roasted asparagus.
After dinner Brady and I went for a walk outside before he left for his soccer game.
