Day 1 of spring break was very productive!
- went to a FIT class of weights and cardio
- stopped at Trader Joe’s
- laundry
- dishes, loaded and unloaded then reloaded 🙂
- great lunch of an egg sandwich similar to yesterday morning’s breakfast
- put away baby things from my shower yesterday
- library to return
- Kroger for some asparagus that was on sale (and a few other things)
- wrote thank you notes
- made a delicious dinner
Our delicious dinner consisted of salmon, brown rice and veggies.
Soy Sesame Salmon Marinade- no real measurements
- about 1/2 c. soy sauce
- 1 tsp. hot chili sauce (red Chinese sauce) – Super spicy
- 1 tbsp. sesame oil
- sesame seeds
Marinate salmon pieces in the marinade for a day in the fridge. Cook in oven at 450 for about 20-25 minutes.
This went so well with our fresh aspargus, broccoli and mushrooms!
It was also great to enjoy a real, healthy dinner at home together. Since Brady was gone for the past two weeks I stuck to simple dinners that didn’t involve much cooking or prep. Then on the weekends we have been going out with friends as much as possible because I know it will be a little before we can go out again!

I have been so happy that asparagus is in season…so looking forward to summer veggies too!
