For the pasta night last night I decided to make homemade meatballs.  I checked out a few recipes – including one of my own that I have used before.  I did a mix of a Cooking Light recipe and my own.  I wanted to keep it simple so here is what I did:

Homemade Meatballs

  • 1  lb. Laura’s Lean Ground Beef
  • 1 egg
  • 1/2 -2/3 c. panko bread crumbs
  • salt and pepper
  • Italian seasonings
  • parmesan cheese
  • garlic powder
  1. Mix all ingredients together and form small balls.
  2. Bake at 375 for about 20-25 minutes.
  3. Toss the warm balls into sauce and serve over hot pasta!
