So my goal this weekend is to catch up on the things I have been meaning to post, but have been to0 tired and pregnant busy to do so.  I have some great reviews coming up including products and books!  I also have a baby update and a list of great questions to ask when you are interviewing pediatricians.

Anyways, rewind to last night.  Brady worked a little late and didn’t get home in time for us to go look at cars so we just ate and went to bed.  We did squeeze in time for some boring childbirth video about the signs of labor (this was not our idea, it was recommended to us) and some cooking for breakfast I had to bring to school today.

For dinner, I wanted baked tofu and Brady was fine having leftover pulled pork so we went with it.  I threw a few sweet potatoes in the oven as fries and we were ready to eat.

The sides of the dinner table looked very different last night:

This amazing creation included:

  • organic romaine lettuce
  • organic spring mix greens
  • tomato
  • pickles
  • avocado
  • baked tofu
  • sweet potato fries that I cut up and mixed into the salad

Across the table…a very different situation was going on:

He ate these with some sweet potato fries.

They were super simple to make!  Here is what I did.

Easy BBQ Pulled Pork

  • pork roast – shoulder cut
  • 1/2 c. brown sugar
  • 1/2 c. ketchup
  • 1/3 c. apple cider vinegar
  • 1 bbq seasoning packet – mine was made for the slow cooker.  I was going to make it, but for $1.19 I could have it all done!

Place meat into slow cooker.  Mix sauce together by combining all ingredients.  Pour over meat and cook on low for 9 hours.

Break apart with a fork and serve on a bun.

This is great for a busy night because it takes no work and it can be ready when you walk in the door!
