Last night was so much! Danielle, Bethany, Kelly and Courtney (my gfs from college) came over for dinner! We had a blast catching up on things, looking through old pictures and laughing. Even though it had only been a few weeks since our last girls dinner, it seemed very necessary!
I thought about making an appetizer but decided against it because we didn’t really need it and dinner was going to be good! This was a good call. For dinner I made Shrimp, Artichoke, Eggplant Orzo with Tomatoes and Feta (recipe will be posted) and Caesar green beans. Bethany brought a salad and some delicious looking wine and Kelly brought the sweetest chocolate covered strawberries for dessert!
To make things more fun, I put in a sweatpants rule. Dinner is so much more fun when you are at home with friends, a fire and some sweatpants and slippers!

Bethany’s salad that was inhaled! I served my famous balsamic dressing :)! This really is nothing special, just something we have at my mom and dad’s all of the time. It’s balsamic vinegar in place of regular or apple cider and mixed with a Good Seasonings packet.

After dinner we sat and ate chocolate strawberries and chatted for a few hours. It was great! Then I went to bed around 11:30pm. Kelly slept over because she is in the process of moving to Boston right now and we managed to wake this morning and head to the gym at 5:30am. It was great having a husband and a roommate last night!
Today I was dragging all day so I need to hit it now. After school and tutoring tonight, Brady and I went car shopping. We test drove a few cars and are still up in the air about what we want. When we got home around 8:30, I had leftovers for dinner and he had a few pulled pork sandwiches that I made in the crockpot today. I felt bad that I only make him chicken…and it is his birthday week!
Hope your week is going fast! Mine would be faster if we could have one more snow day….no chance!
