This week I have been on a new oatmeal kick! I regularly buy frozen mango chunks from Trader Joes’s and I use them in smoothies (or eat them while driving home from the store). This week I was in the mood for mango oatmeal.
I made a batch of banana oatmeal and added some semi-thawed mango chunks. Then I tossed on some ground flax and unsweetened coconut.
It was amazing!

Hmmmm, very interesting. I am not a big mango (or coconut) fan, but my hubby would SOOOO dig this. I may even like it myself LOL. Do you ever do that, psych yourself out of a food??? Thanks for sharing!
