Yay for tomorrow being Friday! I made it to spinning this morning at 6 am! It was a good workout and right now I am exhausted. Noting really happened at school today besides a fight with a few boys at recess and some work on our comparing and contrasting paragraphs. 🙂
After school I stopped at Verizon to keep trying to get my phone fixed…we are almost there. Then I came home to make dinner. I had two recipes – one from Self and one from Cooking Light magazine that I used as a guide.
Here is what I did:
Salmon Florentine
Ingredients
- 1 packages frozen spinach, thawed
- 1/4 cup minced onions
- 2 teaspoons minced garlic
- 1 can diced tomatoes, chopped
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon freshly ground black pepper, plus more to taste
- 2 laughing cow lights
- 2 skinless salmon fillets (6 oz each), rinsed and patted dry
Preparation
- Heat oven to 450 degrees and place salmon on a foiled baking sheet in the oven for 10-15 minutes.
- Place spinach, tomatoes, garlic and onions in a sauce pan and heat until liquid has dissolved then set aside.
- Add 2 laughing cow; stir to combine. Season with salt and pepper.
- Pack about spinach mixture on top of each fillet.
- Place salmon back into the oven for about 10 minutes until salmon and spinach mixture are both hot.
- Serve!
I served this with butternut squash barley risotto. Recipe coming soon!

Don’t you think it would be funny if adults acted like kids and just randomly got into fights in the office? I always think…ya know, maybe kids have the right idea- just do it out and move on! Adults hold grudges instead ;). Great job on the dinner! You always make such pretty dishes 🙂
