This weekend we are headed to Oglebay, a resort place in West Virginia. We are renting a big house with Brady’s extended family and hanging out for the weekend. We have been doing it for a few years and it is always a nice getaway. Saturday we have spa appointments and hanging out. Some people may ski or sled or hit up the pool. I won’t be in a bathing suit this year – something about starting the third trimester just doesn’t scream bikini! There is always next year! 🙂
Each family makes a meal(or two) for the weekend so everyone has plenty of delicious food! Our meal this year is breakfast so we decided it would be easiest and healthiest to make a few stratas and a big fruit salad! Here is the recipe I have used before to make French Toast Casserole. It’s usually a crowd pleaser – especially if you are trying to keep your resolutions!
Low Fat French Toast Strata
- 1 1/2 cartons of Just Whites (egg whites)
- 1 brick of low-fat or fat free cream cheese
- 1/2 c. light or real syrup ( or more if you would like)
- 2 tbsp. vanilla
- 1 tbsp. cinnamon (lots!)
- 2/3 c. skim milk
- 1 loaf or close to it 100% whole wheat bread
- Cut bread into cubes – like 1/2 in. by 1/2 in.
- Place cubes into sprayed baking dish you are planning on serving in
- In a bowl, mix egg whites, syrup, milk, cinnamon and vanilla.
- Cover the bread with the mixture.
- Cut cream cheese into little pieces and place throughout the dish.
- Cover with foil and keep cold in the fridge.
- Let dish set for 10-12 hours/overnight at least so bread is soggy.
- Bake at 375 for about and hour or until egg is cooked throughout!
- Serve hot with syrup!

Brady went to the Ohio State b-ball games with a few guys from work so I was on my own for dinner. You can guess what I had….Green Bean Mushroom casserole! Lots of it! With a pb and jelly sandwich.
