When it comes to making lasagna, I want it to be easy, healthy and meaty for Brady while meat free for me. We don’t have lasagna very often, but when we think of it – it’s always good.
This morning we had a 2 hour delay for school because of ice/snow, so I didn’t have to leave until around 10am. It was so nice to have the morning to get some laundry folded and put away and make dinner. If we hadn’t had the delay, I don’t know when I would have made dinner – we might not have eaten until midnight. So that worked out well!
I had fun with my new DSLR camera while I took pictures as I assembled the meal. The recipe I made up for today’s version was this:
Hers:
- 3 whole wheat noodles – cut in half to make 6 shorter noodles
- tomato sauce
- broccoli
- spinach (squeezed out to drain excess liquid)
- artichokes (drained to lose excess liquid)
- cheesy mixture
His:
- no cook lasagna noodles – probably 6 – they are short and flat
- tomato sauce
- 2 spicy Italian sausage – cooked in a skillet with the casing (yuck) removed
- spinach
- cheesy mixture
Cheesy Mixture
- 1 c. low fat cottage cheese
- 1 c. low fat ricotta cheese
- 2 basil cubes from TJ’s
- salt and pepper
- 1/2 tsp. or so of Italian seasoning
The process went like this:
Sauce on the bottom of the pan.
Then add noodles (whole wheat are on the right side).
Then cover with cheesy mixture.
Then top with meaty sauce for the his side and veggies for the hers side.
Cover with more noodles then cheesy mixture.
One more layer of meat sauce and veggies.
Finally top with noodles, sauce and a little cheese.
Bake at 375 for about an hour or until it’s bubbly and hot.
So easy! I think we should have had company because we barely put a dent in this.
His:
Hers:
We had salads with these delicious pieces! You can guess what we are having for lunch tomorrow. Unless, I decide to go for some Progresso soup!
Check out some old recipes for lasagna – I don’t think you can go wrong when using similar ingredients to make your creation!
