Sunday morning we woke up and went for a run. We went through Old Towne, a great little neighborhood with fun shops! Next time we go to Chicago we are going to go to a great oil shop where you can make your own flavored oils and vinegars. So excited!
After a fun day shopping on Michigan Ave and a stop for some delicious pumpkin chai tea from Argo, we made it back home to enjoy a home cooked meal!
The appetizer was a heatable cheese that we picked up from the farmer’s market. It was really good!
A huge colorful salad with mixed greens, carrots, peppers and fresh spinach.
Served with fun salad servers that Lindsey got from one of her many trips to Africa. She often goes to Africa because she and a friend actually started an orphanage and a school in Tanzania. Check it out at The Olevolos project!
There was tilapia, served on a new platter my mom and I found at Crate and Barrel outlet!
And brown rice, cooked in the rice cooker. I decided I want a rice cooker. It make rice so fluffy and it’s so simple. I have a big steamer but it takes an hour to cook rice – this is one of the few small appliances I am missing!
Last but not least, stir fried green beans. So simple! Just throw a bag of Trader Joe’s frozen green beans into a walk to a skilled with a little olive oil, salt and pepper and pita chips. We just threw them in because they were the bottom of the bag and we thought the crunch would be good!
It was!
Dessert was homemade apple pie that my mom sent home with Kevin a while ago and he was saving it in his freezer.
Our dinner guest of honor was Caitlin! Caitlin is Lindsey’s friend from Michigan and she is wonderful! I was so happy to finally meet her!

Definitely suggest a rice cooker. They’re amazing. We had one growing up and I know it was a LIFESAVER for my mom. Don’t have one yet because I literally can not fit it in my mini apt with the rest of the appliance but SOMEDAY ….
