Recap of yesterday – Wednesday.
Nuts. Crazy. Ridiculous. From a 5:15 am workout to one of students throwing chairs and jumping on tables to not getting home until after 6:30pm, it was one of those days. I had a great dinner planned but by the time I got in my car to leave school at 6:30pm, I gave in and told Brady to pick us up Subway, ASAP. He did and my footlong, yes footlong, veggie delight was just what I needed!
Onto Today!
Today was much more calm than yesterday, I did not feel like I was going to have a heart attack at any point today, which was not true for yesterday. The day went as follows:
5:00 am: workout at the gym
- 45 min. alternating weights and treadmill in 5 min. intervals
- 15 min. on the elliptical
- 15 min. stretching
6:30am: home to shower/get ready for school
7:25am: breakfast – Oats with flax, almond butter, strawberries, pear and smashed banana – in the car on the way to school
7:50 – 4:50pm: school/meetings/planning/grading
5:00pm: teacher store
6:00pm: meeting with Katie to look at wedding invitations for her June wedding!!
7:00pm: start dinner. Chicken Cacciatore from Ellie Krieger: The Foods You Crave pg. 204

7:30pm: eat this DELICIOUS dinner. Both Brady and I loved it. I added more veggies, zucs and squash, than it called for and I left the mushrooms and onions seperate from Brady’s because his taste buds have not matured yet!! 🙂

Brady added black olives and ate his atop a plate of pasta! We were both happy!

Ohhh … fabulous dinner! I love the addition of zucchini and yellow squash. I may just have to add some to ours tomorrow. Thanks for the shout-out, girl! You are the queen!

I just love Ellie Krieger recipes! I was watching her while at the gym today make fettucine with zucchini ribbons and it looked delicious!
You get a lot done in a day by the way!
Adding zucchini would have been good! I should have tried that.
