Since I had the day offย  yesterday,ย  I wanted to make a really good healthy dinner. I emailed Brady to see if he had any ideas and he did! His request (quoted from his email) “Can you make chicken alfredo with broccoli healthy?”. Can I make something healthy? That sounds like a challenge to me!

I searched tons of recipes online and came up with a few that sounded ok, but I was a little skeptical. Since I needed to go to the store anyways, I decided to see what I found there. At the store I found a packet of alfredo sauce mix where all you had to do was add whole milk and butter. The sauce was looked pretty good – it was a garlic alfredo mix. I thought if I started with something with seasoning and powdered milk, then it would cut down on the random fake/gross ingredients that the other recipes called for (fat-free cream cheese, Molly McButter?, etc).

The results were great! We both loved this easy dinner!

Lower Fat Alfredo Sauce

  • 1 packet of garlic-alfredo sauce mix
  • 1 c. of skim milk
  • 1/4 c. fresh parm.
  • *I omitted the butter and changed the whole milk to skim.

Mix all together and boil for about 5 min. Let simmer and serve warm. The sauce will thicken as it heats!

I served the sauce over Barilla Pasta Plus! I love this pasta because it is a compromise between regular (Brady’s choice) and whole wheat (my choice). We both like it!

We also had an Italian style salad with homemade croutons made from a piece of sprouted wheat bread. (Thanks Kath!)
