It’s snowing in Columbus! We got out of school a little early and tutoring was canceled, so I headed home to get my workout over with. I ran to the gym and did the following:
Stepmill – 30 min (220 kcal) Interval program on level 8 and 9
Treadmill – 30 min (285 kcal) Intervals of one minute on each 4.0, 6.0, 7.0 and 8.0
Then I came home to find my driveway covered in tons of snow. With my heart rate monitor still on, I ran outside and shoveled the driveway (well, most of it) while Brady was still not home. (He should be surprised!! maybe shocked). Anyways, this activity had two major benefits for us. 1. Our driveway is now/was clear of most snow. 2. Major calorie burn! In 30 minutes of shoveling I burned almost 200 calories! That takes my total up to almost 700 kcal today!
When I was done with my evening activities, I came inside to do something with the salmon I had thawed. We always buy our salmon from Costco and cut the huge fillet into servings and freeze separately.
Since my dinner of unfried rice from last night did not workout, I decided to try again.
Unfried Vegetable Rice
- 2 cans of sliced water chesnuts (drained)
- 1 can mixed vegetables
- 1 green bell pepper chopped
- 1/2 c. chopped carrots
- 3/4 c. chickpeas
- 1 c. cooked brown rice
- 3 egg whites
- 2 tbsp. soy sauce
- Asian sauce of your choice (I used TJ’s General Tso with added ginger and red pepper)
- Mix all veggies together with sauce in a large frying pan.
- Cook and heat veggies throughly.
- Add 3 egg whites and stir with a spatula while cooking.
- Add cooked brown rice
- Stir until everything is heated and mixed.
To go with our rice, I broiled a piece of salmon with General Tso sauce and minced fresh ginger. I broiled the salmon for about 15 min, until it had a nice crust from the sauce and was cooked throughout.
The plan for the rest of the night was to bake, I owe a few people some treats! I am hoping for a snow day tomorrow so I will have time to bake then>! Do the snow dance for me tonight!

Great recipe- thanks very much. Looks like you pushed through an intense workout- congrats. Do you find that the step-climber adds much mass to your legs? I’ve always steared clear of it for that purpose and usually stick to the treadmill. Love your blog’s name- you sound very generous.

I like the stepmill because it burn tons of calories! I have worked out with a trainer before and they always plan workouts that include it. I think the key to not getting bulky is just switching it up all the time. I try to do at least two different cardio machines each time so I don’t get bored and my body keeps working.
