Last night, I was all set to make shrimp stir-fried brown rice.  I had the bean sprouts in the pan, the mushrooms ready and I went to grab the water chesnuts to toss in…only there were NO water chesnuts to be found in our house!  I was pretty upset by this because I try to have all of our staples at all times, so we can just throw things together.  In a panicky and hungry way, I threw together the following:

More than Shrimp Cocktail (similar to my mom’s party shrimp recipe

  • 1 lb.  shrimp (cooked and detailed)
  • a few pieces of imitation crab meat (I would use real, but we were out and I found this in the freezer)
  • 1/2 c. organic ketchup
  • a few tablespoons of horseradish (to taste)
  • a few tablespoons of hot sauce (to taste)
  • 1 bunch of celery cut into small pieces
  • 1/2 a red pepper cut into little pieces

In my mom’s recipe, she adds chili sauce.  I would have done that except I didn’t have any!  This was a stressful dinner!!

We ate this salad mixture on cooked wanton cups (Brady) and a bed of lettuce (Ali).
