We are back. We got home from Florida last night. It was a great crazy/relaxing trip! The Florida vs. Georgia tailgate (World’s Largest Cocktail Party) was a blast, and it was great to hang out with our friends at the beach! Thank you for everything Hallie! I will post pics later!
Last nigh when we got home, I didn’t feel well. I had a sore throat and headache (planes are so gross!). Brady made a delicious dinner of Chicken Un-fried Rice . It was great!
Chicken Un-fried Rice
- 2 pouches of brown rice (boil in a bad)
- 1 pepper cut into pieces
- 1 can water chesnuts (cut in pieces)
- 1/2 c. diced carrots
- 1/2c. diced celery
- 1 apple diced
- 2 eggs
- diced pre-cooked chicken (we just cooked it on the stove with a little soy and ginger)
Make rice as directed, while that is cooking stir-fry the veggies in PAM and soy/Asian sauce. When the veggies and rice are cooked, scramble the two eggs and add rice, cooked chicken and veggies Heat everything together.
This recipe is great because there are no hidden ingredients – just brown rice, chicken and veggies. You can also make this veggie by exchanging chicken for tofu. You can also make this gluten-free, make sure the sauce is gluten free!
