For dinner tonight we had Brady’s parents and our friends Dave and Jean over for dinner! Everything on the menu was light and healthy! These recipes are easy and will be fun to put into the dinner rotation because they are classic winter time food and they make great leftovers.
Napkin of the Night!
Healthy Cheese Potatoes (Party Potatoes to some) 🙂
- 1 bag hash brown cubes
- 1 can 98% FF healthy request cream of chicken soup
- 1/2 c. 0% Greek yogurt
- 3/4 c. low fat cottage cheese
- 2/3 c. 2% reduced chedder cheese
- salt and pepper
- corn flakes for a topping (with a few sprays of butter)
Mix all ingredients together and bake for at least 1 hour at 350. Top with corn flakes and spray butter and reheat for another 10 min. or so!
Classic Green Bean/Mushroom Casserole
- 1 can healthy request cream of mushroom soup
- 2 cans green beans
- 1 small can of French’s onions
Mix beans and soup together and bake until boiling. Add onions and bake for another 10-15 min. at 350.
Chicken + Zucchini Kabobs
- chicken breast cut into skewerable pieces
- zucchini cut into pieces
- garlic wine seasoning
- lemon/pepper marinade
- salt and pepper
Marinate chicken in lemon pepper seasoning overnight in the fridge. Cut veggies and sprinkle with seasoning. Skewer and Grill!
No Guilt Apple Crisp
- 6 McIntosh apples cut into pieces
- cinnamon
- 1 tbsp Splenda
- 1 tbsp flour
Mix all together and begin baking at 350.
- 1/2 c. oats
- 1/4 oat bran
- 1/4 wheat bran
- 1/4 c. brown sugar
- 2 tbsp. water
- cinnamon
- vanilla
Mix topping together and cover apples once they have cooked half-way through. I served this with fat free cool whip, but I think vanilla ice cream would be even better!!
I have been swamped lately with family in town this weekend, school, starting grad school, finishing my nutritionist certification and trying to live a normal life (working out and cooking :). Sorry for the inconsistent posts! I am keep you informed of anything interesting though, and leaving out the more boring stuff that there isn’t time for (delicious oats usually inspired by Kath! sandwich ideas from Tina)
