So I have been MIA for the past few days, and my routine has been way off! I am back to cooking, preparing and blogging! I will post the recipes from the weekend soon, but for now I am going to start with today.
Breakfast:
- 1/4 c. oats
- 1/4 c. oat bran
- 1/8 c. wheat bran
- 1/4 c. TJ’s fiber twigs
- 1 T. ground flax
- 2 small peaches cut into pieces
- 3/4 c. water
Heat for 1-2 minutes and enjoy! I have tons of fresh peaches and I am enjoying them with everything, but I do prefer the banana in the oats, over the peach.
Lunch was great! I am always trying to think of healthy and different options to easily pack and take to school. Today I made a salad with Napa cabbage, water chesnuts and tuna.
Sesame Tuna Cabbage Salad
- 1 can white albacore tuna
- 1 T. light miracle whip
- 1 t. mustard
- 2 T. sesame dressing (lowfat from TJs)
- 1 t. soy sauce
- 1/2 can water chesnuts, sliced
- 2 c. Napa cabbage, chopped or shaved
- salt and pepper
Mix the first 6 ingredients together. I stored my overnight in the fridge because I packed my lunch the night before. At school, I added the tuna to the cabbage so it would not be soggy!
I enjoyed my lunch with Alexander (also from Alexander Who Used To Be Rich Last Sunday) a great book for all kids! 🙂
My snack while the kids were at art class:
My brother is in town from Chicago and so we enjoyed dinner on the deck tonight. He had a burger on the grill and I was planning a special zucchini treat with the zuc. my aunt sent home with me yesterday. The zucchini treat did not turn out as I had hoped. I was thinking it would be like a pancake, but it did not work out that way. I should have drained the zuc. because it was sooo watery. It tasted good though. Here is what I mixed: ( I would drain the zucchini if you are going to try this.)
- 2 c. chopped zucchini
- 1/2 c. bread crumbs
- 1/4 c. parm. cheese
- 3 egg whites
- salt and pepper.
I mixed the above ingredients together and cooked on the stove for a while! I was hoping to get rid of all the liquid but it did not happen! It looks pretty gross!
I also had a salad with light feta, light Italian dressing, tomatoes, and carrots.
I had a ton of cookies to make for a baby shower! I snacked on a little dough for dessert. I was hoping to workout this evening but it did not happen. Luckily, I got 25 min. in this morning!
