Sorry I have been totally MIA for the weekend. I can’t believe it is already Monday! It is so nice to have today to regroup and hangout. We had a block party last night, which was a great time! They close off our street and everyone sets up tables and cornhole and coolers. What a great way to connect with neighbors!!
I had to bring a side dish to the party and I wanted something that didn’t have to be warm and could sit out for a while. I decided to throw together a quinoa salad! It would be something different that people could try and enjoy!
Mexican Quinoa Salad
These measurements are for feeding a block party 🙂 Please adjust according to the number of people you are serving.
- 2 c. quinoa cooked as directed in 4 c. water
- 1 avacado cut into small pieces
- 3 tomatoes
- 1 can black beans
- 1 can corn
- 1/2 c. light Italian dressing
- 1 tsp. cumin
- 1 T. lime juice
- 1/2 can chick peas and white beans (these were leftover in my fridge so I threw them in)
Mix all ingredients (except quinoa) together. Add more cumin, lime, dressing and salt and pepper as you like. When ingredients are mixed, add quinoa.
QUINOA!! My favorite “grain” (since it’s high-protein and gluten-free) – yum! 🙂
WOW! That looks awesome!! I’ve always wanted to make quinoa, but haven’t yet. This recipe sounds delicious though!! I will definitely keep it in mind for when I do! (Whenever that is!!)
