Today flew by!  It seems like my bowl of fruit and cereal was days ago, not hours.  I packed a good amount of food to keep me going threw school, then to the gym, then to Trader Joes for restocking.

Lunch was leftovers salad:

Not really a great angle on the picture but it included:

  • romaine and spinach
  • 1 small piece of grilled chicken
  • TJs hummus and homemade hummus
  • lentils
  • peppers
  • light feta
  • tomatoes

It was really filling, but I still managed to eat a bag of 94%FF kettle corn after.

Around 3pm, while my kids were at P.E. class I snacked on this:

This kept me full through my hour of cardio, afterschool from 5-6pm.  I stopped at TJs after the gym and didn’t get home to eat dinner until 7ish.  I was surprisingly not starved like usual.

Brady had a soccer game at 6:30pm, and I didn’t want to wait for him to get home at 8ish to eat so I went ahead and made myself dinner.  I wanted a veggie-hummus sandwich with sprouted bread, but I also wanted some zucchini.  Decisions, decisions!

I went ahead and breaded some zuc with bread crumbs and parm and “fried” them in Pam on the stove.  While they were getting brown and crispy, I decided to throw in some fresh mozzarella and basil.  I also added 2 roma tomatoes.  This turned out to be great!   Because I still wanted the veggie-wich, I settle for an open faced hummus veggie along with my zucchini mix.

For dessert, I mashed up a banana ( I don’t want another cramp in my calf, I also drank about 100 ounces fo water today, so I hope that helps!) peaches and strawberries and swirled them with almond butter!  So yummy!

Tomorrow we are having company for an end of the summer dinner!  Any new ideas to try?!
