Tonight, we were supposed to have company for dinner, but it didn’t work out that way. My brother ended up flying in from Chicago around 7pm, so we just threw dinner together with him. We have had house guests for almost a week, and I have not been to the store since before that so I thought dinner might be interesting. It turned out much better than I would have thought!
When I got home from school, I thawed some salmon I had previously frozen. I sprinkled it with salt, pepper and garlic-wine seasoning. Brady then threw it on the grill. It turned out PERFECT!
I decided to make salad because I had tons of random fresh veggies. I cut up the following so we could add them to our own salads:
Yellow and Red Tomatoes
Green Pepper
Random Farmer’s Market Veggies
Canned Corn and Black Beans with Cumin Spice
Same ingredients different products.
Ali’s Plate
Brady’s Plate
Not pictured: brown rice, hummus, tortilla chips and homemade guac.
For a very last minute, thrown together dinner, this turned out very well. Hopefully we will be able to reschedule the company with more time to cook – and more groceries!!
Such vibrant, gorgeous vegetables!
Where in the world do you get your frozen salmon – it looks phenomenal!!! Typically when I have frozen salmon it doesn’t look that flavorful!!
I get a big piece of fresh salmon and then I cut it into portions for dinner and freeze them!
🙂 It’s so much better than buying frozen.
