I made it through! The first day of third grade was classic. The kids were excited, sweet and as funny as always! I will have many fun stories with this bunch. A short one for now..today a little boy in my class was chewing his pencils, then chewing his erasers, then chewing his fingers. I asked him at least 4 times to please keep things out of his mouth because he was going to spread germs to other kids. His response “Can I bring the dog toy my mom bought me to chew on tomorrow?” Like I said, it is always interesting!! 🙂
For breakfast, I made classic oatmeal with wheat bran, flax, oat bran, banana, and fruit.
For lunch, I had a classic spinach-fruit salad with raspberry vinaigrette (light from TJ’s) along with 1/2 c. Fage mixed with 1/2 c. All bran. I was stuffed! I ate my lunch in bites while running around today, sorry no pic!
For dinner, after a 5 mile walk/run, I made my classic ginger/soy/garlic salmon with veggies and brown rice. It hit the spot today and tasted delicious!
Broccoli, zucchini, squash, mushrooms, lentils, roasted corn and onions, served over brown rice!
Ginger-Soy Salmon
Ginger- Soy Marinade
1/2 c. Soy Sauce
1 T fresh ginger paste (TJ’s)
1 T minced garlic
1 tsp. sesame oil
Salmon looks AMAZING! yum yum!
