I decided since I have been slacking in the workout department, I should go to strictly strength class at the gym.  Class was from 11-12 and it was worth it!  I will be sore tomorrow. 🙂  I ran a few errands until around 1pm when I had to go home because I was STARVING!  The oatmeal held me over pretty well though.  Luckily, I had leftovers from last night to zap in the microwave.

I mixed: leftover veggies, 2 tbsp. hummus and 1/2 quinoa together for a filling and flavorful bowl!

For dessert I mixed: 2 tbsp. Fage 0%, with 2 tbsp. unsweetened applesauce and ate it with a spoonful of almond butter.  The picture was pretty boring so I am going to skip it!

I should have some time tonight so I am planning on baking!  We will see what I come up with…any ideas??
