We decided to have people over for dinner last night, surprise!! Haha! We ended up having 2 couples, baby Reese, and Brady’s old roommate over. I wanted to make something easy, healthy and summery. I think I made some good choices. The menu consisted of:
– Grilled Italian Gusto Chicken (a nautral chicken pre-marinated)
– Greek Bulgar Salad
– Grilled Veggies ( yellow squash, zuc. and mushrooms)
– Grilled potatoes (leftover from baked potatoes we had the other night)
– Napa Salad (my mom’s recipe)
Everything was great! Our friends loved the bulgar, which no one had had before. I will definitely be making that again.
Greek Bulgar Salad
- 1 c. bulgar cooked according to package
- diced veggies: artichokes, tomatoes, cucumbers
- diced fresh basil and arugula
- 1/2 c. light feta
- 1 tbsp. olive oil drizzled on top
- salt and pepper
Mix all ingredients with cooked and cooled bulgar. This can be eaten right away but doesn’t have to be.
Napa Salad
- 1 head of chopped/shaved Napa cabbage
- 1/2 – 3/4 c. cashew pieces
- 1 block of Ramen noodles crushed up
Dressing
- 2 packets of seasoning from Ramen package
- 2 tbsp. sesame oil
- 1/2 c. apple cider vinegar
- 2 tsp. sugar or splenda
- 2 tbsp. canola oil
Shake it up and pour it on!!
