Greek Bulgur Salad
- 2 cups of bulgur, cooked
- 1/3 cup fresh mint, chopped
- 1/2 cup fresh parsley, chopped
- 1 large tomato, chopped
- 1 cucumber, chopped
- 1/2 jar of kalamata olives, chppped
- 1 can chickpeas, drained
- 1/2 cup feta, crumbled
Dressing:
- 3 T. lemon juice
- 3T. EVOO
- 3T. Red Wine vinegar
- salt and pepper
- 1 tsp. oregano
- 3 fresh garlic cloves, pressed
- Mix all chopped veggies with cooked bulgur
- Add feta and stir in dressing.
- Enjoy as a salad or in a pita!
i went through a huge bulgur phase last year and then totally forgot about the stuff…need to get it back in my life! 🙂
I know! I recently got a big bag from Costco and forgot how much I love it! My sis-in-law is in Grad School at Wash U and we need to get out to STL to visit her! I would love to meet up for coffee or lunch when we come out!
