Apple Cinnamon Quinoa 1 c. rinsed and drained 1 c. water + 1 c. almond milk 1 T. vanilla 2 apples – peeled, cored and diced 1/2 teaspoon salt 1T. ground cinnamon 2 T maple syrup 1/3 cup sliced honey almonds 1/2 c. almond milk Bring the quinoa, almond milk and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes. In a small pot, add 2 T. water, the apples, and sprinkle with salt, cinnamon, and maple syrup. Let simmer until soft – about 2-3 minutes. Pour in the extra almond milk. Continue cooking until hot. Add the apple to the quinoa, and cook together a few minutes before serving. Sprinkle with honey roasted almonds and more cinnamon. Leftovers are the best! Share on Facebook
