
We are in the full swing of fall lately and I love it. The trees are beautiful and it’s crisp out, perfect for a big sweater.
It is soup weather.
And what is better than a soup that will be ready for you when you want it. A soup you can throw together in a few minutes.
A soup that wants and deserves fun toppings.
Chicken Tortilla Soup

Directions
- Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, and pepper.
- Stir in corn, black beans and cilantro.
- Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
- Top soup with anything you’d like! Have fun with it!
We have a fun weekend planned with Em coming to visit tonight! Tomorrow, catch up time with Em + Hallie over a run and coffee, then we are heading to Emmy’s 1st birthday party and then to Hallie’s for a dinner party!
Sunday should be relaxing, catching up on house stuff, some bar building and football.

Great idea to just cook chicken because I get so sick of making it and now that the grill is not as fun to use, it’s a bummer! I am going to have to try this! What do you put with it?

I’m just so lazy! 😉 i put in some adobo, water, pinch of salt, lite soy
sauce. I cook it on high for a couple of hours 🙂
