Cabbage is one of those things that you don’t really like until you are older.

You don’t appreciate it’s slight bite or it’s extreme crunch.

You don’t value the fact that it doesn’t get soggy when dressed for a party.

  You don’t care that it adds color and spunk to a table, a plate and a taco.

You don’t realize, but cabbage is great!

When Kara brought this fabulous summer slaw for a dinner party I had, I could.not.get.enough.

I made her leave the leftovers and the dressing. I made her tell me the recipe and I am going to make her make it for me again.

Kara’s Summer Slaw

  • 1 head of green cabbage, shaved very thin
  • 1/2 head of red(purple) cabbage, shaved very thin
  • 1 red onion, shaved very thin
  • 1/3 c. apple cider vinegar
  • 1/3 c. rice wine vinegar
  • 1/2 c. olive oil
  • 1 tsp. cumin
  • salt + pepper

Make dressing and serve on slaw.

The combo of vinegars is amazing.
