Here is a delicious dinner recipe! It’s so light and fresh and summery! I think I could eat it every night!  It was inspired from a recipe I saw in EatingWell.

Quinoa Tabouli

  • 1/2 c. dry quinoa (cooked as directed in 1 c. water or broth)
  • 1 big cucumber – cut into small pieces
  • 3 roma or firm tomatoes cut into small pieces
  • 1/2 bunch (1/2 cup?) of (small plastic container) flat leaf parsley
  • 1/2 bunch (1/2 cup?) of (small plastic container) mint
  • juice 1/2 lemon
  • 1 tbsp. olive oil
  • salt and pepper
  1. Cook quinoa as directed.
  2. Cut tomatoes and cucumbers into small pieces
  3. Ground parsley and mint together in the mini food processor
  4. Mix olive oil, lemon and salt and pepper together
  5. Mix everything together – quinoa, dressing and veggies.

Then add some Aladdin’s hot sauce and tahini yogurt sauce and dig in!
