Yesterday was a fun day! My mom, brother, Anna and I hung out. They stayed with Anna while I went to Lifetime and got my butt kicked at Total Conditioning. It was one of the best and hardest group fitness classes I have ever done. It made me want to start teaching group fitness again. I used to teach in college and I loved it. Then once I started teaching third grade I didn’t want to teach fitness classes because I just wanted my workout to be me time. I think I want to get back into it…. time will tell!
So after class, some of us did some relaxing… while the rest of us showered and got ready for the day.
Then someone played….while the rest of us got ready for a dinner party!
We made a rib dinner for 9. My parents, Kevin and I, Cindy and Tom, Aunt Sharon and Uncle Jim and Elizabeth. It was a like a big family dinner on a Wednesday. We were sad that Brady and Lindsay and Joe missed it!
The menu:
Baby Back Ribs – cooked for 4 hours in the oven then grilled
Fresh Corn from Chautauqua
Baked Sweet Potatoes
Zucchini Appetizer – my Nana’s recipe as well as a low fat version
Coleslaw
Caesar Salad
We started the party with an appetizer my aunt Sharon brought. I will post the recipe today! This was a simple and pretty dish that everyone loved.
Then there was cornhole and baby time while we waited for the ribs to cook on the grill.
We sat down to a feast!
Zucchini Appetizer
Nana’s recipe
Low fat version:
Baked Sweet Potatoes:
Cindy’s Coleslaw
Ridiculous amount of ribs
My mom’s classic caesar salad:
Fresh Sweet Corn:
Iced Tea
Ready to Chow:
I stuffed myself with salad, sweet potato, coleslaw and zucchini appetizer! Yum!
By the end of the night, we were exhausted from all of the fun!
Mmm….drooling over here!
Anna is getting so big!
The zucchini app looks awesome. Admittedly the “full fat” version look better but I bet the healthier version made you feel lighter and healthier 🙂
Anna is absolutely adorable and I am sure that she is going to be a real heartbreaker when she grows up.
The family meal also looks fabulous. I hope you post some of the recipes, because I am sure that I would LOVE to make some of the recipes for my family!! 🙂
