After an interesting dinner at a place called Tilli’s, right down the street in Lincoln Park, we went to my cousin Brian’s house for his birthday celebration. He lives with two great guys who are always so much fun! They had a lot of people over, many who went to Notre Dame and were watching the end of the game. Bummer for them, luckily they didn’t seem too upset after a few beers though!
I am so sad that I didn’t take any pictures of their place, them or their healthy snacks! They were quite the hosts! They had a variety of dips, pulled pork sandwiches, pita chips, this great bean salsa and vegan cupcakes! Plus a keg in their kegerator. I enjoyed a nice glass of water, though. 🙂
I did get some pictures of the cupcakes because Erin made them and I was excited to try them!
She isn’t all vegan but found the recipe on Goop.com, a blog by Gwenyth Paltrow. It is a recipe from the all vegan bakery in NYC called Babycakes.
The cupcake was chocolate and was made with chickpea flour and a ton of other ingredients. The frosting was coconut and was made with soy milk, soy milk powder, coconut oil and a bunch of other ingredients that many don’t usually have on hand.
The frosting was delicious! It was light and coconutty. The cupcake had good flavor but it was a little dry. I told Erin, in every vegan cookbook I read they say not to cook it for a second too long or it will dry out. I think under baking these a little might be a good idea to make sure they are more moist. After all – there are no eggs in them you need to worry about!
