I would say that we have been busy lately, but we are always busy so I guess that’s just life.  Each day is packed with different things that keep us on our toes and running all around.

For as busy as we are, one thing I usually keep straight is my menu.  I have to plan in advance to make sure I have the ingredients I need for making dinners.

 But, sometimes that doesn’t always happen.  

And sometimes that is how delicious dinners are born.

This artichoke chicken dish came together with things from my pantry that didn’t require waking a sleeping peanut for a trip to the store.  It’s a perfectly decadent throw-together meal.

Chicken with Artichokes and Spinach

(serves 4 but makes great leftovers if you want to make more!)

  • 4 chicken breast – thin or cut into thin pieces.
  • 1 c. chicken broth
  • 1 c. white wine
  • 1 bag of frozen (or 1 can) of artichoke pieces – diced
  • 1 can of fire roasted diced tomatoes
  • 1 onion, sliced thin
  • 1 bag of frozen spinach
  • feta cheese
  • 2-3 garlic cloves
  • salt + pepper
  • 2 T. olive oil
  1. Trim chicken breast of fat and cut to make thin, if not already thin. Sprinkle chicken with salt and pepper.
  2. In a roasting pan, combine chicken broth and white wine.  Preheat oven to 375. 
  3. In a frying pan, add 1 T. olive oil and chicken breast.  Cook for about 1-2 minutes on each side until browned. 
  4. Place browned chicken into roasting pan and wrap tightly with foil.  
  5. Cook chicken for about 40 minutes until it’s tender and juicy. 
  6. While chicken is cooking, use the frying pan to cook the onions. 
  7.  Add 1 T. olive oil, 2 cloves of crushed garlic, and  a little water to the sliced onion.  
  8. Saute until onion is cooked.  
  9. Add chopped artichokes to the onions and cook together for 2-3 minutes. 
  10. Remove from heat and transfer for another dish.
  11. In the same frying pan, cook frozen spinach with diced tomatoes – and 1/2 c. juice.  
  12. Cook until combined.  Stir in 1/2 c. feta cheese to the spinach tomato mixture. 
  13. When chicken is done, layer dish.  
  14. Place the tomato/feta/ spinach into a dish, top with chicken and cover with artichoke/ onion mixture.
  15. Top with more feta!  
  16. Serve!
