For a party we went to this weekend we brought this simple and fresh appetizer. It was easy to make and tasted great on a hot day because it was light and cool!
This recipe was modeled after one my father-in-law makes often: Cucumber Sandwiches.
Roasted Red Pepper Cucumber Bites
- 1 loaf of small square pumpernickel bread (often found near prepared foods section or deli-not bread isle)
- 1 large or 2 medium cucumbers
- 1 jar roasted red peppers
- 1 block of reduced fat cream cheese
- 3/4 packet of Hidden Valley Ranch seasoning
- Mix softened cream cheese with ranch seasoning and place in the fridge for at least an hour. This can be done up to a few days ahead of time.
- Meanwhile, cut the cucumber into thin slices and the red pepper into pieces about the size of the cucumber.
- When the cream cheese is ready. Spread a generous amount of cream cheese onto a piece of bread.
- Slice the bread in half-diagonally.
- Top with a piece of red pepper and cucumber
- Serve cold or at room temp.
