For a party we went to this weekend we brought this simple and fresh appetizer. It was easy to make and tasted great on a hot day because it was light and cool!

This recipe was modeled after one my father-in-law makes often: Cucumber Sandwiches.

Roasted Red Pepper Cucumber Bites

  • 1 loaf of small square pumpernickel bread (often found near prepared foods section or deli-not bread isle)
  • 1 large or 2 medium cucumbers
  • 1 jar roasted red peppers
  • 1 block of reduced fat cream cheese
  • 3/4 packet of Hidden Valley Ranch seasoning
  1. Mix softened cream cheese with ranch seasoning and place in the fridge for at least an hour. This can be done up to a few days ahead of time.
  2. Meanwhile, cut the cucumber into thin slices and the red pepper into pieces about the size of the cucumber.
  3. When the cream cheese is ready. Spread a generous amount of cream cheese onto a piece of bread.
  4. Slice the bread in half-diagonally.
  5. Top with a piece of red pepper and cucumber
  6. Serve cold or at room temp.
