After a pretty good (only up 3 times) night last night, we had a fun family breakfast. Usually for breakfast we have three different meals going on. I make some sort of oat mixture (cookie dough oats, oatmeal, oatbran – all involving nut butter), we make Anna some baby cereal with applesauce or yogurt, and Brady has a smoothie. He likes having the same thing every day – if it’s not broken, why fix it. Then we all eat our different dishes together.

Well today was another story. Here is what happened:

Me: What do you want for breakfast? We have eggs?

Brady: Do you want eggs, I’ll make them if you do?

Me: No, not really. What do you want?

Brady: I’ll have oatmeal.

Me: WHAAAT? In over 9 years, I don’t remember you ever saying that.

Then I thought, I need to make some good oatmeal so he likes it and we can have oatmeal mornings more often. Since it was a special occasion, I decided to give Anna some too! Why make 3 breakfasts when we could make 1. So I made a batch of Kath’s whipped banana oatmeal. It did not disappoint.

  • 1 cup of oats
  • 1/2 cup of skim milk
  • 1/2 cup of water
  • 1 small banana sliced thin
  • splash of vanilla
  • pinch of salt
  • 1 scoop of Mila, chia seed
  1. Mix rolled oats, water, and milk in a saucepan over medium heat.
  2. Slice a banana into thin pieces, into the pot.
  3. Once it begins to bubble, stir vigorously at times to “whip” the banana into the oats.
  4. The oats will absorb the liquid and thicken up!
  5. Top with your choice of toppings

My bowl was topped with berries and almond butter! It was a great way to start the day. Then I went for a 5 mile run with Ticia! Luckily we beat the sleet/rain/snow mix we are getting right now.
