Here is an interesting recipe a friend told me about. I gave it a try when we had company over last night and they loved it! I didn’t tell them there was cottage cheese in it until after they had chowed down. They were pretty surprised but not disappointed 🙂
- 1 box Sugar Free Chocolate Pudding
- 1c. lowfat (1%) cottage cheese
- 1c. light vanilla soy milk
- Cool Whip Free
- strawberries (optional)
Mix the pudding, cottage cheese, and soy milk together and refrigerate for at least 30 min. before serving. When serving, place a 1/2c. into a ramkin or small bowl and top with Cool-Whip Free (non-fat, sugar-free) and sliced strawberries! This is a very filling dessert because it is packed with protein from the cottage cheese.
