I served these tonight when we had our friends over for dinner. These are great! You can add any veggies you would like to them, and even add some steak or shrimp if you are in the mood. Also, I am not big on measuring so let me know if you have any questions.
Chicken/Veggie Marinade ( I marinated these in different bowls because of the whole raw chicken thing)
- 1 part balsamic vinegar
- 1 part light balsamic salad dressing
- 1 part red wive vinaigrette salad dressing
- splash of EVOO
- garlic wine seasoning ( from the Melting Pot, my FAVORITE spice)
I cut up chicken into 1 inch cubes and soaked the chicken add day in an air tight container in the fridge.
I did the same with the veggies: eggplant, mushrooms, zuchinni, onions.
We skewered the veggies with the chicken and tossed them on grill. We started them on burners and moved them to the top rack after a few minutes. They were delicious!
