Lentil Tomato Veggie Wraps

My Eat, Drink and Be Vegan cookbook was the inspiration for this meal. I was going to make the chimichangas but I got to hungry to wait for them. Here is what I did:

Tomato Lentil Sauce

2 can crushed tomatoes 1 c. lentils handful of sliced basil 1 c. water salt and pepper garlic powder Mix all ingredients together and simmer until as thick as desired.

Assemble the rest of the wraps:

A Flat Out Good Day

The morning started with coffee, made by my mom. Her coffee is always better than mine. I think it is because I am not the one who makes it, but who knows!

Followed by blueberry banana mush.

Served on a Flat Out Multigrain wrap with some natural pb.

Tuna Time – Twice

Lunch, around noon, consisted of a veggie-filled tuna salad on a Flat Out multi-grain wrap. I wasn’t starving for lunch but I knew I needed to eat because I was headed to the gym, then the mall then the grocery store. I decided to put any veggies we had in the fridge into my tuna (white albacore). The veggies consisted of: red and yellow peppers, cucs, sugar snap peas, tomatoes, celery and dill pickles. Fresh and Simple

Simple, Easy and Fresh

For lunch today I had a Flat Out Wrap with the following:

- lentils: steamed from Trader Joes

- broccoli slaw

- arugula and spinach

- grape tomatoes

- alfalfa sprouts

- special sauce

Simple, Easy and Fresh

For my sweet treat I am sticking with the blueberries:

- 1/2 Fage 0%

- 1/2 blueberries

- 1 tsp. with almond butter on it
