<p><b><u>Lemon Tahini Wheat Berry Salad</u></b></p>
<ul>
<li>2 c. cooked wheat berries or spelt berries</li>
<li>1 c. chopped arugula</li>
<li>1 c. chopped or diced tomato</li>
<li>1/2 c. chopped peppers</li>
<li>1 c. chickpeas</li>
<li>Lemon Tahini Dressing</li>
</ul>
<h3><span style="text-decoration: underline;"><font size="3"><span style="font-size: 12px;">Lemon Tahini Light Dressing</span></font></span></h3>
<p>Adapted from <a href="http://ohsheglows.com/2010/12/06/staying-healthy-during-the-holidays/">Tahini-Lemon Dressing</a>.</p>
<p><strong>Yield:</strong> Just under 1 cup of dressing</p>
<p><span style="text-decoration: underline;">Ingredients:</span></p>
<ul>
<li>1/3 cup Tahini</li>
<li>4 garlic cloves, minced or pressed</li>
<li>1/2 cup lemon juice (about 2-3 lemons)</li>
<li>1/3 cup nutritional yeast or a bit more, to taste</li>
<li>2 T. tbsp Extra virgin olive oil, to taste</li>
<li>1 tsp kosher salt + freshly ground black pepper, or to taste</li>
</ul>
<p><strong>Directions:</strong></p>
<p>1. In a bowl, add all ingredients and mix until smooth.</p>
<p>2. Pour onto salad or use with other recipes!</p>

			<content:encoded><![CDATA[<p>There are lots of occasions that give me a chance to make dinner for other people. From hosting people at our house, to taking dinner when a loved one is lost or a new baby is born, I love cooking for other people. I usually find it easiest to cook when people are coming to my house, but this meal challenges my original thought.</p>
<p>I took dinner to the cutest family, who live down the street and just had a baby girl! I wanted to make something they could reheat and that would travel easily, so this meal fit perfectly!</p>
<p><strong>Chicken Feta Artichoke Orzo -</strong> a variation of the shrimp-artichoke- orzo</p>

<ul>
<li>1 can of diced tomatoes</li>
<li>1 can of artichoke hearts &#8211; quartered</li>
<li>1 lb. orzo</li>
<li>2 grilled chicken breasts</li>
<li>1 container of reduced fat feta cheese</li>
<li>garlic, salt and pepper, italian seasonings, basil, etc.</li>
</ul>
<ol>
<li>Put the can of tomatoes and artichokes (with all of their juice) into a pan to simmer.</li>
<li>Add seasonings if your prefer.</li>
<li>Boil water and cook orzo as directed.</li>
<li>While things are cooking, chop up the grilled chicken into small pieces</li>
<li>When orzo is done, drain but don&#8217;t rinse, and add tomato/artichoke mixture, plus chicken and 3/4 container of feta.</li>
<li>Stir until mixed. Top with remaining feta!</li>
</ol>
<p>*This can easily be reheated!</p>

<p>Bread to go: Fresh French bread, sliced and buttered with herb butter (italian seasonings, garlic, s+p, stirred into room temp. butter)</p>
<p>Wrapped in foil for easy reheating!</p>
<p><strong>Spinach &#8211; Wheatberry &#8211; Goat Cheese &#8211; Cranberry salad</strong></p>

			<content:encoded><![CDATA[<p>I went into school today to begin getting my classroom ready for the year!  Wow, this summer has flown.  It felt like we were just in school.  Anyways, I left home around 11 and on the way I ate a Slim-Fast granola bar.  I meant to take a pic but I was in a rush.  These are really good actually.  They taste more like a chewy granola bar than a protein bar but they have 15g. of protein, so they are filling.  I had the chocolate chip kind, which has 190 cal.  Not bad for a mini-meal bar.  This held me over until I got home from school, around 2pm.  I didn&#8217;t know what I was in the mood for but this hit the spot.</p>
<p>I heated a Boca Burger in the microwave and ate it on a piece of lettuce with a squirt of light mayo, spicy mustard, ketchup and dill relish.  I also had this!</p>
<p><strong>Berry Salad</strong></p>
<ul>
<li>strawberries, blueberries, wheat berries</li>
<li>salty and sweet sliced almonds &#8211; I made last night</li>
<li>romaine</li>
<li>arugula</li>
<li>homemade sesame dressing</li>
</ul>
<p>Mix it all and enjoy!</p>
