This week has been flying by, busy and exhausting and fast. To keep our energy high I made a fresh wheat berry salad. Inspired by Angela and past wheat berry salads I have made.
It’s packed with fresh lemon juice to wake you up.

Summer Wheatberry Salad
salad:
1. 5 c. cooked wheat berries 1 can white beans – drained and rinsed 1 can chickpeas – drained and rinsed 2 large tomatoes – diced 1 large cucumber – diced 1/2 c. crumbled feta
dressing:
1/3 c. EVOO 3 T. lime juice 4 T. white wine vinegar 2 T chopped parsley – fresh 1 T honey mustard 1/4 t. salt 1/4 t. pepper
Make the salad by combining all ingredients. Add dressing and serve!

Super Simple Wheat Berry Salad
1 c. wheat berries – cooked as directed 1 can of chick peas handful of carrots – pieces handful of peppers – sliced garlic wine seasoning – as much as you like 1 tbsp. olive oil salt and pepper
* Next time I would add some tomatoes and spinach for more volume!

I went into school today to begin getting my classroom ready for the year! Wow, this summer has flown. It felt like we were just in school.
