Fish Tacos

I made fish tacos for Brady’s birthday last night – his request. They were as delicious as always!

He enjoyed them on the special birthday plate my mom gave us a few years ago.

Mahi Mahi Fish Tacos

frozen Mahi Mahi fillets – as many as you are serving plus a few extra in case 1/3 c. lime juice 2 T. EVOO 2 T. crushed garlic 1 T. cumin

Mix marinade ingredients together and pour over fish. Let marinate

Mahi Mahi Fish Tacos

Yesterday was a good catch up day. We did laundry, dishes, and lots of playing. After lunch we met my cousin Em at Easton. Em took Anna shopping while I went to the gym for about 45 minutes. Then she came over and hung out here with us. Too bad she is headed home today, but at least she isn’t in NYC anymore!

* 1 (8 ounce) package light cream cheese

* 1 jar salsa

* 1 packet of taco seasoning

* 2 cups chopped cooked chicken breast meat – I used natural

Hot, Hot, Hot

It has been HOT. HOT, HOT in here today and this week! Our air had been working on and off and the people finally came to fix it today. In order for it to get fixed, it had to off all day though…ugh! So after letting the temp. inside the house get to 88* we got to turn the air back on and it’s currently a cool 85 in here now.

Despite the hot weather, I had a fun day!

Lentil Tacos and a Hospital Tour

Tonight was our hospital tour day!  I came home from school and made dinner for my brother(who is in town for the weekend), Brady and I.  It was the basic taco bar which included:

lentils for me shredded chicken for the boys corn black beans tomato avocado lettuce salsa brown rice
