Grilled Sweet Potato, Peppers and Onions Recipe

The Menu for today said BBQ Chicken, sweet potatoes and caprese salad so I set to work early. I cut up sweet potatoes this morning before Little A woke up. I love getting things done in the morning while I am drinking my coffee. I feel like everything I do is a bonus. I am an early bird for sure! By 10pm…well more like 9pm I am done. Nothing productive happens after dinner really.

Pork, Pineapple, Peppers, and Potatoes

I took the recipe we love from Cooking Light and decided not to cook it as kebabs. It turned out as delicious as always. I think it is one of my favorites! I love the veggies and the pineapple. I had mine with tofu while Brady enjoyed the lean pork tenderloin.

Asian Salmon Burgers

Yesterday was a busy day. We had a ton of unpacking to do from the weekend and Anna had her 2month appointment and shots. She made it through but it was not a fun experience for any of us! Bake Sweet Potato Fries and a visit from Uncle Kevin

My brother Kevin came yesterday from Chicago to meet Anna!  He fell in love right away!  We spent lots of time hanging out and relaxing.

When Brady got home from work, we broke out some Cinco de Mayo beers and some happy hour chips and guac!

I stuck to lemonade because I don’t want to mess with breastfeeding (alcohol can affect milk supply) just yet.

Brady made guac using fresh lime juice, fresh salsa and some Mexican spice.
