			<content:encoded><![CDATA[<p>Today was a long day at school.  I don&#8217;t know if it was just getting back into it or the fact the heat was on and it was 83 degrees outside, but I was uncomfortable all day.  My back hurt and I just felt bad.  It was the first day I was really uncomfortable for the whole day &#8211; I know I should not complain, after 39 pretty easy weeks.</p>
<p>So after school I came home and thought about laying down, but how do you lay down when it is summer outside!  Instead I kept my plans to walk and catch up with Katie!  We did a 3 mile loop (only stopping for the bathroom once!)  and I felt much better!  It was good to be moving.  I think spinning will be in order in the morning to keep my body moving.  We will see if I can wake up&#8230;</p>
<p>So after our walk, I came home and got set on making dinner.  We are using everything in our pantry and fridge until Wednesday because I am not going to the store before then.   Tonight we had stirfry and quinoa which was made mostly from pantry ingredients.  Here is the random recipe I made up similar to one I have seen in <a href="http://www.magsdirect.com/eatingwell.html">Eating Well Magazine</a>:</p>
<p><strong>Asian Stirfy with Sesame Beef and Quinoa</strong></p>
<p><em>Beef for Brady:</em></p>
<ul>
<li>1/2 lb. of beef (lean ground sirloin is what I used)</li>
<li>1 tbsp. sesame oil</li>
<li>1 tbsp. sesame seeds</li>
<li>2 tbsp. teryaki</li>
<li>1 tsp. chili garlic sauce (super hot)</li>
</ul>
<p><em>Veggies:</em></p>
<ul>
<li>1 bag of Asian veggies from the frozen section (we had these in the freezer)</li>
<li>1 can water chesnuts</li>
<li>1 can bamboo shoots</li>
<li>1 tiny head of cabbage, shaved</li>
<li>2 tbsp. chili garlic sauce (hot!!)</li>
<li>2 tbsp. hoisin sauce</li>
<li>2 tbsp. soy sauce</li>
<li>sesame seeds</li>
</ul>
<ol>
<li>In one pan, cook beef and seasonings</li>
<li>In another pan cook all veggies with seasonings until they are desired a tenderness.</li>
<li>Serve together or separate &#8211; whatever you like!</li>
</ol>

<p>Now we are headed to bed in the thunderstorm.  Hopefully it rains tonight so it is nice for tomorrow when I have recess duty.</p>

			<content:encoded><![CDATA[<p>I made it to the pool for a few hours today and when I got home I was a little hungry but it was pretty close to dinner time, so I decided to skip the snack.  Since Brady was still in NYC I decided to take advantage of my meatless dinner freedom and make a feast of veggies.</p>
<p><strong>Summer Veggie Stir-Fry with Marinara</strong></p>
<p>Chop the following veggies:</p>
<ul>
<li>asparagas</li>
<li>zucchini</li>
<li>broccoli</li>
<li>tomatoes</li>
<li>roasted corn (from TJ&#8217;s)</li>
<li>arugula</li>
</ul>
<p>Stir fried them with a little garlic wine seasoning and minced garlic. When they were almost done I added some marinara and a little fresh parm.</p>
<p>This was really filling and flavorful!  <em>*If I were making this for company I would have added some ground turkey meatballs or I would have used this veggie mix as the topping of a flatbread or a pizza.* </em></p>
<p>With it I had a bowl of very ripe kiwi, honeydew and a peach.  I finished it off with the rest of the lemon chiffon.  It was early when I ate, so I am planning on wanting a snack later&#8230;maybe popcorn?!?</p>

<p>Our Asian Feast included:<strong> Garlic-Ginger Grilled Salmon </strong>on the grill, <strong>Quinoa </strong>and  <strong>fresh veggie stir-fry.</strong></p>
<p><strong>Garlic-Ginger Grilled Salmon</strong></p>
<ul>
<li>2 pieces of fresh salmon</li>
<li>2 tbsp. minced garlic</li>
<li>1/2 c. soy sauce</li>
<li>1 tbsp. minced fresh ginger (comes in a jar from TJ)</li>
</ul>
<p>Brady threw the salmon on the grill about 15 minutes before we were ready to eat on low heat.  While he was tending the grill I was making mixed veggies.</p>
<p><strong>Fresh Asian Stir-Fry</strong></p>
<p>* I cut the following fresh veggies into &#8220;chunks&#8221; and simmered them in a little Garlic-Ginger marinate and some TJ&#8217;s Asian sauce.</p>
<p>- zucchini</p>
<p>- yellow squash</p>
<p>- shelled edamame</p>
<p>- sugar snap peas</p>
<p>- water chesnuts</p>
<p>- red cabbage</p>
<p>- mushrooms</p>
<p>- carrots</p>
<p>These cooked on the stove for about 10-15 minutes while the salmon was on the grill.</p>
<p>I was thinking about mixing the veggies in the quinoa before serving it, but opted not to for leftover purposes.  I will make this meal again and again.  It was easy, healthy and wonderful!  It would be great for a dinner party or  to warm up for lunch tomorrow!</p>
